healthy-ish crepes – serves two
you will need:
2 eggs + 4 egg whites
4 tablespoons of flour
1 teaspoon of sugar
a dash of vanilla
a dash of salt
on medium heat, grease a pan suitable for crepes. pour just enough batter in to thinly cover the pan. flip when crepe becomes golden, then remove when the other side is the same. makes about 6 crepes. we ate ours with a mixture of maple syrup and apricot jam. like i said … really healthy π
