a few weeks ago to dinner at my mom’s house, she served a small appetizer that consisted of small gobs of goat cheese stuffed in between sliced avocado wrapped in prosciutto. above you will see the lazy version, prosciutto wrapped avocado turned salad. all i did was slice up all the ingredients i just mentioned, added a few toasted pine nuts, dash of salt and pepper, and called it a day … or a brunch. and let me tell you either way you prepare it, it’s delicious nonetheless.

    yum! what a perfect combo! im lucky to live on a place with about 30 organic avocado trees so you know where ill be walking today……!
