







i always have the hardest time cooking for myself when camden is working late. i feel like i most often find myself getting takeout (once again) and have recently been looking for options that are healthy yet still easy and delicious. this dinner is one i’ve recently been obsessed with. it’s so beautifully simple; asparagus splashed with olive oil, sprinkled with salt and pepper and baked at 450 degrees for 8-10 minutes, then drizzled with reduced balsamic vinegar. i paired them with sliced gouda cheese and grapes with skins so tight they are bursting from the seams. seriously i’ve made this more than a few times recently and plan to make it just a few more (at least).

I love to eat grapes and cheese, although I do prefer green grapes! I'll be sure to try that asparagus recipe, seeing as I cook for only meabout 90% of the time!
Grapes and cheese make the best dinners… but adding asparagus was BRILLIANT!

i agree..cooking for one is not as fun (especially when my hubby is the master chef)!! but i can't deny my love for a dinner made up 1/3 of gouda!! mmm!

That looks so delicious! I love any simple preparation of asparagus. My favorite meal for one when I'm home alone is cooked spaghetti with some cut up steamed asparagus/broccoli/peas (whatever I have in the fridge) and 2 poached eggs on top, cracked so the yoke becomes like the sauce. Add salt, pepper, and maybe a sprinkle of parmesan. So good!
This looks beautiful. The reduced balsamic is pretty smart too. I'll need to do something like that soon 🙂
