yesterday, camden and i spent the entire day deep cleaning our home. the kind of deep cleaning we haven’t done since we first moved in, one year ago this week. it took us literally the entire day and we have clean closets, unstuffed drawers, and three large garbage bags of things to be donated to show for it. by the end of the evening we were ready to reward our hard work with a little something special, so i lit a flickering pumpkin candle that crackles as it burns and got to baking us some warm chocolate pistachio biscotti in celebration of our newly clean home and the first night of fall. oh and how the combination of that pumpkin candle and baking biscotti made the house smell … with the sounds of lightly fizzling wood and soft folk tunes playing in the background … quite romantic it was … the perfect first cozy night of autumn.
chocolate-pistachio biscotti by martha stewart
you will need:
6 tablespoons of unsalted butter
2 cups of all purpose flour + extra for baking sheet
1/2 cup of unsweetened cocoa powder
1 teaspoon of baking powder
1/4 teaspoon of salt
1 cup of sugar
2 large eggs
1 cup of shelled pistachio nuts
1/2 cup of chocolate chips
pistachio ice cream for serving (we used pistachio gelato by talenti)
step one: preheat oven to 350 degrees. butter and flour a baking sheet; set aside.
step two: in a medium bowl, whisk together the flour, cocoa power, baking powder, and salt. in the bowl of an electric mixer, cream the sugar and butter until light and fluffy. add egg; beat until well combined scraping down the sides if needed. add flour mixture and mix to form a thick dough. stir in pistachios and chocolate chips. mix until combined.
step three: transfer dough to prepared baking sheet; form into a slightly flattened log, about 12 by 4 inches. bake until slightly firm, about 25 minutes. cool about 5 minutes (i would let it cool for about 10 minutes) reduce oven to 300 degrees.
step four: on a cutting board, using a sharp serrated knife, cut biscotti diagonally into 1-inch-thick slices. arrange biscotti, cut side down, on a baking sheet, and bake until crisp but still slightly soft in the center, about 8 minutes. serve with pistachio ice cream and enjoy!
Looks so good! Biscotti is one thing I have yet to try and make (it's on a long and ever-growing list, of course).
